To protect meat products from pathogen exposure, meat processors must take proper food safety precautions throughout the entire meat processing operation. If animals have not gone through a washing process during the holding pen stage or if they were improperly washed, bacteria may remain on their hides which can be a potential source of contamination during the slaughter and processing stages. It is vital to reduce microbial contamination as early as possible, so as to avoid foodborne illnesses, such as Salmonella and E. coli, in the meat products.

It is a legal requirement for all food businesses in Australia and New Zealand to abide by the food standards code set by the Australia New Zealand Food Authority and undertake regular hazard analyses as part of their HAACP plan. This includes performing an analysis specifically focused on microbial contamination.

An effective way of helping to achieve food safety in meat products during the processing stage is to wash the meat carcass after slaughter, ensuring the meat is clean and ready for further processing. Hot water has been proven to be the most effective natural method for this application. Our specialised team of AutoJet engineers have developed the AutoJet Carcass Washing Spray System to assist meat processing facilities enhance their carcass washing applications, while reducing unnecessary water use.

The AutoJet Carcass Washing Spray System is designed to thoroughly wash carcasses and remove blood, bone fragments, hair, wool and faecal matter with hot water. The cutting-edge system uses ShowerBLAST spray nozzles strategically positioned on spray bars, to ensure a uniform spray pattern and consistent coverage across the entire surface of the carcass.

When it comes to spraying hot water, the ShowerBLAST spray nozzles are remarkably efficient. Their solid stream spray patterns minimise air atomisation which results in optimum heat transfer of the water. Another major benefit of using the AutoJet Carcass Washing Spray System, is its ability to control the spray cycles and spraying duration. Often times, meat processing plants will have water continuously running as the carcasses go through the wash, using unnecessary amounts of water. This system allows for spraying to begin once carcasses have entered the wash and cease as they leave, thus reducing water consumption.
