A local pastry producer has slowly been switching from artisan to industrial production to keep up with their competitors. To ensure they don’t compromise on the quality of their products they are changing their process one step at a time.

Recently we were contacted to see if we could help them increase the shelf life of their madeleines without interfering with the taste of their product. This would help them to be more competitive and secure their space in the marketplace.

AutoJet® Alcohol Spraying System

With over 80 years of experience in spray technology and a dedicated food division we were confident that we would meet the pastry producers’ expectations.

To prolong the shelf life we proposed to spray a tiny amount of alcohol onto each madeleine to prevent bacterial growth. Specifically we needed to spray 0,2 grams of alcohol on 350 products each minute. We can easily do this thanks to Precision Spray Control (PSC). This technology allows us to turn nozzles on and off very quickly to control the flow rate. This cycling is so fast that the flow often appears to be constant. More importantly it means that the alcohol is only sprayed onto the products and isn’t being wasted.

After demonstrating the AutoJet® Alcohol spraying system and PSC our customer agreed to order the system:

The pastry producer was happy to note that their expectations had been met. By spraying a very small amount of alcohol onto the madeleines we can safely prolong the shelf life without compromising product taste or quality. The new AutoJet® Alcohol Spraying System has allowed the producer to find new customers and expand into new markets.
